Tex-Mex Chili

Whether your looking for a warming meal on a cold night or feeding the football fans, this recipe is simple, easy and quick to get on the stove or in the Insta Pot.
6-8 Portions
Ingredients:
2 lbs ground beef
1 ea. onion-diced
1 ea. green pepper-diced (optional)
4 Tbsp New Market Spices Tex Mex Chili seasoning
2 28oz whole peeled tomatoes
2 14oz red kidney beans
Optional veggies: Corn, sweet potato, celery
Optional toppings: Sour cream, grated cheese, green onions, cilantro, jalapenos, Fritos corn chips, avocado
 
Directions:
1. Sauté onions until translucent.
2. Add ground beef and cook until it begins to brown.
3. Add seasoning and sauté for an additional 30 seconds.
4 Add whole tomatoes and crush with hands or potato masher. Bring to a boil, then simmer until tomatoes have broken down, about 45-60 minutes.
5. Add rinsed beans and green pepper. Simmer for 5 minutes.
6. Adjust salt to taste.
7. Serve on its own or add your favorite toppings. Enjoy!
 
This has been a favorite recipe that doesn't require a lot of prep to create. As a friend does in making this recipe, he adds Samuel Adams Octoberfest beer in place for some of the juice from the tomatoes. Experiment and have fun!
